Thanks to my older sister for the recipe and for showing me how to make this quick and easy soup!
400 g can 4 Bean mix thoroughly drained (in a sieve, rinse with cold water)
a can of tomatoes, tasty ones with herbs or garlic or so
2-3 handfuls of Pasta (spirals or elbows, or penne or so)
2-3 cups liquid vegetable stock (cubes disolved in hot water is fine)
1 small Onion, chopped
1 teaspoon crushed Garlic
a couple of Salami Sticks, chopped (optional)
Oil
salt, pepper, herbs, whatever you want
some chopped veges, eg. Carrots, Capsicum, Parsnip (optional)
Put some oil in a Soup pot on mid to low heat. Cook the onion until it’s clear. Add the salami sticks and cook those for a few minutes. The throw in the beans, veges, pasta, tomatoes and stock. Make sure the pasta is all covered, otherwise add another cup of stock. Stir. Leave to simmer on medium heat until the pasta is cooked. Add salt, pepper, herbs, whatever you want, to taste. Serve with fresh bread.
